Half Acre Beer Co. has been a legend in Chicago’s craft beer scene since 2007. What began as a small operation in Black River Falls, WI quickly became a favorite among local bars and shops. By 2008, they set up shop on Lincon Ave, where they first brewed their iconic Daisy Cutter Pale Ale—which they’re still known for today.

Fueled by creativity and community, Half Acre brews bold, innovative beers that always have something new to add to the craft scene. We especially love their Sunrise Vallejo IPA, made from New Zealand hops that bring aromas of melon, berry, and pine to every sip. 

2. Original Pattern Brewing Co.

Original Pattern Brewing Co. takes beer seriously. Based in Oakland, they specialize in experimental beers that showcase hop complexity in unexpected ways. With one of the largest New Zealand hop contracts on the West Coast, they offer a diverse range of distinct and coveted flavors. They were also featured in USA Today Magazine’s list of Top 10 Best New Breweries! 

One of our favorites is Original Pattern’s Easy Bird Hazy IPA. Made with 100% English ingredients, this beer is reminiscent of biscuits and caramel with a dry and bitter finish. Since they are always brewing new beers, their offerings rotate frequently—so hurry and check out what’s available now!

Fort George Brewery in Astoria, Oregon is known for their adventurous approach to brewing. They offer a variety of both year-round brews and evolving series, and no two batches are exactly alike. Plus, they use high-quality local and organic ingredients whenever possible.

We’re big fans of Ghost Town’s Geisterfaust Pilsner. It’s crisp and clean with a mild sweet and toasty malt character, making it incredibly versatile for any occasion. If you love a well-rounded Pilsner, this one is definitely a standout.

Their stream of limited-edition beers makes Cellarmaker one of the most sought-after breweries around. 

One of our favorites is Cellarmaker’s Gold Stallion Pilsner. This light lager is brewed with floor-malted Bohemian Pilsner malt, which gives it a delicate, clean, and refreshing flavor with just the right amount of bitterness.
